Book excerpt: Excerpt from Methods for Manufacturing Acid-Precipitated Casein From Skim Milk The volume of skim milk necessary for successful operation of a casein factory is greater when casein is the only product made than when other skim-milk products are made also. If casein is the only product to be made, it will probably be necessary to process at least pounds of skim milk daily, and even larger quantities are advisable. The cost of manufacture per unit amount of casein should decrease with an increase in the daily volume of business. When other products are made in a plant that is equipped to make casein, then casein can be made from a small daily volume of skim milk at very little additional cost for labor and power. In such a plant the making of casein may be advisable when only to pounds of skim milk per day are available for its manufacture. Sweet, clean, unpasteurized skim milk, fresh from the separator, is desirable if high-grade uniform casein is to be made. Such fac tors as fermentation, and excessive fat and foam in the skim milk, may deleteriously a rect the quality of the finished product.
